I would suggest you to pick a damage type, stick to it since you don't wanna change devotions everytime you find a new cool item, and build accordingly.

In my opinion Defensive Ability is the most important defensive stat but it is not sufficient by itself. You still need adequately large health pool and good resists in addition to stacking Defensive Ability. those three stats together (Health, Resists, DA) are the "holy trinity" of defenses in my experience.
